Recipe: Roast Duck

This year we raised our first meat ducks. It was an interesting experience and we will likely be raising more next year. The hardest part in the entire process was finding a processor that would process them. We found one just south of Rockford, IL and will be going to them for all of our future duck needs. Enjoy this amazing recipe, and don't skip the garlic.




Easy Roasted Duck

1 – Wild Child Farms whole roasting duck, thawed and at room temperature

2 tsp salt

2 tsp paprika

1 tsp black pepper

½ c melted butter

Optional: 2 tsp minced garlic


Directions:

Preheat oven to 375 F. Remove giblets. Rub salt / pepper / paprika / garlic into the skin of the duck and place into a roasting pan. Roast duck for approximately 1 hour. Spoon ¼ cup of butter over the duck and continue cooking for an additional 45 minutes. Spoon remaining ¼ cup of butter over the duck and cook for 15 minutes or until golden brown.
