Heritage breed turkeys are raised with a slower growth rate, allowing for more outdoor foraging and resulting in a richer, more flavorful meat with a better dark-to-light meat ratio compared to commercially bred turkeys, which are often bred for maximum breast size and grow much faster in confined spaces.
Suggested serving sizes are based on 1.5 pounds of meat per person, which should allow for leftovers.
